Squash Parmesan






 Squash Parmesan

 ~ Til 2 personer trenger du ~
2 squash
Fersk mozarella
Revet parmesan
Tomatsaus
Basilikum
Fullkornspasta

~ Slik gjør du ~
Vask squashen og skjær den i tykke skiver. Stek den gylden på begge sider men ikke vent til den er blitt helt myk. Mye bedre med litt å bite i! 

Ha dem over i en ildfast form. Ha litt tomatsaus på hver bit. Jeg brukte en hot tomatsaus jeg laget av cherrytomater, chili, hvitløk, ricotta og basilikum men her kan du sikkert bruke hva som helst, til og med en ferdigkjøpt tomatsaus fra butikken.

Dryss over rikelig med parmesan, fersk mozarella og hakket basilikum og sett formen inn i ovnen. Jarlsberg funker garantert også i stedet for mozarella . Min tok ca. 10-15 minutter på 200 grader. Er ferdig når osten er smeltet og begynner å bli litt gylden på toppen.

Server med fullkornspasta.

Fant denne oppskriften på  A Cozy Kitchen og bare måtte prøve den med en eneste gang. Og den skuffet ikke! Dette er seriøst noe av det aller beste jeg har smakt og det kommer helt klart til å bli en gjenganger hjemme hos meg!

A Cozy Kitchen and I can totally vouch for it! One of the best meals I've had in a long time and it's already a favorite 'go to meal' for me since it's really fast, healthy and sooo good. 

I served mine with whole grain pasta and that worked out perfectly!

  7. Britni: Actually I think it's exactly the same dish only you swap eggplant for zucchini :)
    Next time I'll try eggplant parmesan!

    My husband just asked me the other day when I will make my zucchini dish- which is similar to what you made here- I like how yours is a one pan dish-

  21. This looks so delicious! Do you think i could substitute the zucchini with cucumber? I have cucumbers growing abundantly in my vegetable garden, and i need to use them up quickly! xx

  22. mmm mmm! looks scrumptious! i just made a zucchini & eggplant casserole tonight, even though it was much too hot here in new york to have the oven on :)

    stacey- i don't think that cucumber would work since it doesn't bake very well, but you could certainly substitute squash or eggplant!

  26. Stacey: I don’t think cucumber would work very well since it doesn't hold the water when cooked. But a nice cucumber salad on the side would be perfect :)
